Protein Ice Cream Sandwhiches
•10 organic graham crackers, broken in half
•1 pint of Enilghtened Ice Cream of choice
•1/2 lb of dark chocolate
•1 tbs coconut oil
•sprinkles, coconut flakes or graham cracker crumbs
1. Melt dark chocolate and coconut oil in a heat resistant bowl over boiling water on the stove, stirring constantly to prevent from burning. Line baking sheet with aluminum foil and place 10 halves of graham crackers on baking sheet. Spoon a scoop of ice cream onto graham crackers, then place other half on top to create a sandwhich. Once all graham crackers are made, dip half of the sandwich into the melted dark choclate mixture and place directly onto baking sheet. Imeediately sprinkle with your fave toppings and place into freezer for at least 30 minutes.
